
A Bacolod Favorite that Became a City Hit
It was 1976. The Cajili Family boldly introduced Bacolod Chicken House, serving the local specialty, inasal, a beloved barbecue skewer in Bacolod City, Negros Occidental. And it didn’t take long for the delicious dish to capture the hearts–and taste buds–of Bacolodnons.
Confident that this hometown favorite could make it big in the city, one of the Cajili family members teamed up with a close friend to bring an inasal restaurant concept to Manila. Armed with a family recipe that stood the test of time, the owners refined the Cajili family’s special marinade to create their own signature version. And the rest is history.
Inasal Chicken Bacolod first opened its doors in 1997 along Pedro Gil Street in Manila. When we welcomed our customers, our goal was simple: to create a warm, inviting space where busy people can enjoy smoke-seared dishes in comfort. As luck would have it, our little restaurant became an instant hit, earning its place as a go-to spot for food lovers.
Today, we have branches across Metro Manila and are planning to open more soon—spreading the classic taste of inasal that everyone has come to love.
